That sounds delicious - but Aditya hates fish of all sorts. Guess I'll make it some night and he can have some cold cereal or something.

Now, I am upset. How come Avial went to Kerala. Thought it was part of Tamilnadu.

Hmmmm.... Well! Maybe they make Avial in my household on the account of that we are from Kanya Kumari (The southern most tip of India) which used to be part of the Travancore (Present day Kerala).

OK.. Here is an amazing yet simple recipe for a dish called "fish Mollie" (Kerala dish..but stolen by my family for Tamilnadu. Woot! Woot!). If you ever get tired of the red/brown masala curry and want a more pastel dish.. this is it. And Gori Gori, your Bengala guy would surely love this. I am 99% sure.

FISH MOLLIE

Ingredients:
•	Fish slices(few) (Thilapia is a good candidate for this)
•	Onion sliced = 1 no.
•	Slit green chilies	= 6-8 nos.
•	Finely sliced ginger	=1” piece.
•	Tomatoes cut =1 no.
•	Coconut milk =1 can (Chaokoh - Coconut Milk 13.5 Fl. Oz. is the best. Its much thicker. If you use any other brand you may need more than 1 can)
•	Nutmeg powder	=1/4tsp.
•	Lime juice =2tbsps.
•	Curry leaves =few
•	Coriander leaves	=1/2 bunch.
•	Coconut oil =3tbsps
•	Salt =to taste.

Method:

•	In a pan heat 1tbsp coconut oil, add curry leaves, green chilies, onion, fry till transparent( should not get brown)
•	Add the ginger and sauté for 5 seconds.
•	Add coconut milk, fish ,little water, cook for 10 minutes.
•	Now add nutmeg powder, salt, tomatoes, boil for 1 min. and switch off.
•	Garnish with coriander leaves, lime juice and the remaining 2 tbsps of coconut oil and serve.

Here is what you must have while traveling the Delhi-Agra-Jaipur triangle

Mathura: Pede & Jalebi (Both sweet. try Brajwasi Sweets. Some of the best sweets are made in Mathura. You can also try veggie lunch here, I think it would be a good breakfast stop while driving from Delhi to Agra)
Agra: Petha & Gajak
Jaipur: Daal Baati & Choorma

The trick is in knowing each state's particular specialties, I think - the wiki article on sweets just groups by regions. If you have suggestions on a state-by-state basis, it probably wouldn't be too hard to put together another one for sweets and/or snacks.

We actually have a cousin in the travel business who is booking our hotels in Rajasthan & getting us a driver, but thank you for the suggestion, NS.
If you have any tips on off-beat places to go in Bikaner, Jaisalmer, Jodhpur, Udaipur, or Jaipur (yep, we're hitting 'em all), please let me know!

I wish there is a similar sweet/snack map of India. More than food, I grew up eating snacks & sweets. There are tons of varieties apart from the very very sweet type. http://en.wikipedia.org/wiki/List_of_Indian_sweets_and_desserts.
This list is not complete.

And snack list is separate.

1) I deeply admire whoever was responsible for putting together this glorious map.
2) Red ant chutney intrigues me perhaps more than it should. I must try this at some point. Soon.
